Moist Vegan Gingerbread

An ultra-moist gingerbread, scented with warm spices, fresh ginger and acacia honey. Plant-based version without lactose or eggs, ideal for vegan (or almost) diets. Easy to make in under an hour, it stores well and lends itself to many variations (crumble, croutons, canapés).
