- 4 large Eggs (room temperature)
- 2 cups Milk (whole milk preferred)
- 0.5 tsp Salt (fine sea salt for batter)
- 0.25 cup Butter (unsalted, melted)
- 2.5 cups All-Purpose Flour (sifted)
- 1 lb Ground Beef (85% lean, slightly fatty)
- 1 tbsp Olive Oil (for sautéing)
- 0.5 tsp Salt (for meat seasoning)
- 0.25 tsp Ground Black Pepper (freshly ground)
- 0.25 tsp Garlic Powder
- 1 medium Onion (grated fine)
- 1 cup Mozzarella Cheese (shredded)
- 1 tbsp Fresh Dill (chopped)
- 1 tbsp Butter (unsalted, for pan‑frying)
- 0.5 cup Sour Cream (full‑fat, for serving)
Instructions
Make Crepe Batter
Crack 4 large eggs into the blender, add 2 cups milk, 0.5 tsp salt, 1/4 cup melted butter and 2.5 cups sifted flour. Blend on medium speed for about 2 minutes until smooth and lump‑free.

Preheat Crepe Pan
Place the crepe pan over medium heat and let it warm for 2 minutes.

Cook Crepes
For each crepe, pour 1/4 cup batter into the pan, tilt to spread thinly. Cook 1 minute until edges turn golden, flip and cook another 30 seconds. Repeat until batter is used (about 12 crepes).

Prepare Meat Filling – Sauté Beef
Heat a large frying pan over medium‑high heat, drizzle 1 tbsp olive oil, add 1 lb ground beef, season with 0.5 tsp salt, 0.25 tsp black pepper and 0.25 tsp garlic powder. Break up the meat and cook 5‑7 minutes until fully browned.

Stir in the grated medium onion and continue cooking 2‑3 minutes until softened.
