Ingredients
- 1 large Cucumber (thinly shaved into long ribbons)
- 4 tablespoons Whipped Cream Cheese (softened)
- 1 cup Cooked Chicken Breast (shredded; can use rotisserie chicken)
- 0.25 cup Fresh Cilantro (finely chopped)
- 0.25 cup Red Onion (diced and soaked in water for 5 minutes to mellow)
- 1 medium Avocado (peeled and cubed)
- 2 tablespoons Processed Cheese (shredded; e.g., American cheese)
- 2 tablespoons Mayonnaise (full‑fat)
- 0.25 teaspoon Garlic Powder (optional)
- 1 tablespoon Lime Juice (freshly squeezed)

Instructions
Slice cucumber
Thinly shave the cucumber into long ribbons using a mandoline or a sharp knife, then lay the ribbons on a sheet of parchment paper.

Dice the red onion, place it in a bowl of cold water and let it soak for 5 minutes, then drain and pat dry.
