Ingredients
- 2 pieces Avocado (ripe, medium, skin removed)
- 0.5 piece Lemon (freshly squeezed juice)
- 2 tablespoons Olive Oil (extra virgin)
- 2 stalks Spring Onions (chopped)
- 100 grams Cucumber (peeled optional, diced)
- 1 piece Hot Chili Pepper (seeded, optional for heat)
- 1 teaspoon Fresh Horseradish (grated, optional)
- 150 grams Feta Cheese (crumbled)
- to taste pinch Salt
- to taste pinch Black Pepper
- 1 teaspoon Smoked Paprika (for garnish, optional)
- 0.25 piece Avocado (for garnish) (thinly sliced, optional)
Instructions
Prepare the Avocados
Cut the avocados lengthwise, remove the pit, scoop the flesh with a spoon and place it in the blender bowl.

Add Acid and Oil
Squeeze the juice of half a lemon over the avocado, add 2 tbsp extra‑virgin olive oil and blend until smooth.

Incorporate Fresh Veggies and Heat
Add the chopped spring onions, diced cucumber (with or without peel), the chili pepper and grated horseradish. Blend briefly until combined.

Finish with Feta and Seasoning
Add the crumbled feta cheese, a pinch of salt and black pepper. Blend until the spread is creamy and homogeneous.

Transfer the spread to an airtight container, smooth the top, and refrigerate. It will thicken slightly as it chills.
