- 2 lb Red Potatoes (washed, skin left on, diced 1‑inch cubes)

- 4 cloves Garlic (minced)
- 1 tsp Cajun Seasoning (or any smoky spice blend)
- 3 stalks Green Onions (sliced thin)
- 2 tbsp Fresh Parsley (chopped)

Instructions
Prepare the potatoes
Wash the red potatoes thoroughly, leave the skins on, and dice them into roughly 1‑inch cubes.

Cube the sausage
Slice the smoked sausage link into bite‑size cubes.

Dice aromatics
Dice the small onion and mince the garlic cloves. Slice the green onions and chop the parsley; set aside for later.
