  • 250 g Ground chicken (Preferably finely minced)
  • 1 clove Garlic clove (peeled and minced)
  • 4 tbsp Light soy sauce (3 tbsp for dipping sauce, 1 tbsp for filling)
  • 1 tbsp Fish sauce (For filling)
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 4 tbsp Sesame oil (1 tbsp for filling, 2 tbsp for tossing, 1 tbsp for dipping sauce)
  • 1 tsp Cornstarch (Helps bind the filling)
  • 2 Green onion (One for filling, one for garnish, finely chopped)
  • 30 Wonton wrappers (Round wrappers, about 10 cm diameter)
  • 1 tbsp Toasted sesame seeds (For garnish)

Instructions

  1. Prepare the filling

    Peel the garlic clove and mince it. Finely chop the chicken (or use ground chicken). In a mixing bowl combine the chicken, minced garlic, 1 tbsp light soy sauce, 1 tbsp fish sauce, ½ tsp salt, ¼ tsp ground black pepper, 1 tbsp sesame oil and 1 tsp cornstarch. Mix until everything is evenly coated.

  2. Add green onion to the filling

    Finely chop one green onion and stir it into the seasoned chicken mixture. Set aside.

  3. Make the dipping sauce

    In a small bowl combine 3 tbsp light soy sauce with 1 tbsp sesame oil. Stir well and set aside.

  4. Assemble the dumplings

    Lay a wonton wrapper on a clean surface. Place about 1 tsp of the chicken filling in the center. Moisten the edges of the wrapper with a little water, fold the wrapper into a triangle, press the edges together to seal, then bring the opposite corner over to create a classic wonton shape, pressing to glue the final seam. Repeat until all wrappers are used.

  5. Cook the dumplings

    Bring 3 L of water to a rolling boil in a large pot. Gently add the dumplings, stirring lightly so they don’t stick to the bottom. Reduce to medium heat and cook without a lid until the water returns to a boil (about 3‑4 minutes). Quickly add about 25 ml of cold water to lower the temperature, then let the water come back to a boil again. Repeat the cold‑water addition once more, then cook for another 2‑3 minutes until the filling is fully cooked and the wrappers are tender. Remove the dumplings with a slotted spoon and drain.

  6. Finish and serve

    Transfer the cooked dumplings to a large bowl. Drizzle with 2 tbsp sesame oil, toss gently, then sprinkle toasted sesame seeds and the remaining chopped green onion on top. Serve immediately with the prepared dipping sauce.
