Ingredients
- 10 tablespoons Unsalted butter (cold) (cut into small pieces)
- 1 cup All‑purpose flour (for crumble topping)
- 1 cup Old‑fashioned rolled oats (not quick‑cooking)
- 0.5 cup Light brown sugar (packed)
- 0.5 teaspoon Kosher salt
- 1 teaspoon Ground cinnamon
- 3 pounds Granny Smith apples (peeled and sliced ~½‑inch)
- 0.5 cup Light brown sugar (filling) (packed)
- 2 teaspoons Ground cinnamon (filling)
- 0.25 teaspoon Kosher salt (filling)
- 3 tablespoons Cornstarch (thickener)
- 1 teaspoon Vanilla extract
- 2 teaspoons Apple cider vinegar
- 2 tablespoons Unsalted butter (for dotting) (cut into small pieces)
- 1 portion Pre‑made flaky pie crust (Dessert Person) (enough for a 9‑10 inch pie)
Instructions
Make the crumble topping
In a mixing bowl combine the cold butter pieces, 1 cup flour, 1 cup rolled oats, ½ cup packed light brown sugar, ½ tsp kosher salt, and 1 tsp ground cinnamon. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse crumbs with no visible butter pieces.
Time: PT10M
Chill the crumble
Transfer the crumble mixture to a piece of plastic wrap, form into a disc, and refrigerate for at least 15 minutes.
Time: PT15M
Prepare the apples
Peel all 3 lb of Granny Smith apples, then slice them into half‑inch thick pieces. Place the slices in a large bowl.
Time: PT10M
Season the apple filling
To the sliced apples add ½ cup light brown sugar, 2 tsp ground cinnamon, ¼ tsp kosher salt, 3 tbsp cornstarch, 1 tsp vanilla extract, and 2 tsp apple cider vinegar. Toss gently until the apples are evenly coated.
Time: PT5M
Roll out the bottom crust
Lightly flour a work surface and your rolling pin. Gently thwack the pre‑made flaky crust to soften it, then roll it into a 9‑10 inch circle. Transfer to the pie plate, allowing the dough to naturally drape over the sides. Trim excess dough, tuck the overhang under to create a double‑thick lip, and press the edges firmly against the side of the plate.
Time: PT10M
Assemble the pie
Arrange the coated apple slices evenly in the crust, pressing a few pieces into the bottom‑side junction to avoid gaps. Dot the fruit with the 2 tbsp of cold butter pieces. Sprinkle the chilled crumble evenly over the top.
Time: PT5M
Bake – initial high heat
Place the pie on a baking sheet and bake in a pre‑heated oven at 400°F for 20 minutes. This burst of heat sets the crust edge.
Time: PT20M
Temperature: 400°F
Bake – finish at lower temperature
Reduce the oven temperature to 350°F and continue baking for about 1 hour, or until the apple juices are bubbling around the crust edge and the crumble is golden brown.
Time: PT1H
Temperature: 350°F
Cool the pie
Remove the pie from the oven and let it cool completely on a rack before slicing. For best texture, bake the night before and serve chilled or at room temperature.
Time: PT30M
